Sheet Pan Chicken Sausage and Veggies

Ingredients You’ll Need:

  • Sweet potato.
  • Red bell pepper.
  • Carrots.
  • Chicken sausage.
  • Broccoli florets.
  • Olive oil.
  • Garlic cloves.
  • Garlic powder
  • Paprika.
  • Onion powder.
  • Salt and pepper.
  • Shaved parmesan.
  • Silicone Baking Mat. Optional but recommended!

This is one of the best sheet pan meals to keep in your back pocket for busy weeknights! We make a version of this every single week because it’s super easy and the whole family loves it. Feel free to add/swap any veggies that you prefer or have on hand. Anything goes here. Zucchini, yellow squash, green beans, Brussels sprouts, you name it.

Pro Tipp for Sheet pan meals: use a Dexas silicone baking mat for easy cleanup and a great way to reduce your use of cooking oils, sprays, aluminum foil, and parchment paper. The mats are made with a food-grade silicone and fiber mesh that provides more even heating and more uniform results. The food I cook on these mats always cooks perfectly and releases super easily. Plus, cleanup is a breeze!

One thing to note: I don’t recommend using these baking mats under the broiler as it can change the color of them. They are safe for up to 475 degrees, however.

Sheet Pan Chicken Sausage and Veggies

Ingredients

  • 1 large sweet potato (or 2 smaller potatoes)
  • 1 red bell pepper, diced
  • 3 carrots, peeled and sliced
  • 12 oz package pre-cooked chicken sausage, sliced into rounds (kielbasa is also delicious!)
  • 12 oz package broccoli florets
  • 1/4 cup olive oil
  • 2 tsp minced garlic
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 1 cup shaved parmesan

Instructions

  1. Preheat oven to 425 degrees and line a large rimmed sheetpan with parchment paper, foil, or a silicone baking mat (my personal preference)
  2. Add sweet potato, bell pepper, carrots, and chicken sausage to sheetpan.
  3. In a separate small bowl, combine olive oil, garlic, salt, pepper, paprika, garlic powder, and onion powder and stir until combined.  Pour over veggies and chicken sausage and toss until everything is evenly coated.  Bake for 15 minutes.
  4. Add broccoli to sheetpan and drizzle the broccoli with a little olive oil, salt and pepper.  Bake for an additional 15-17 minutes, until veggies are tender.  
  5. Add shaved parmesan and bake another 1-2 minutes, until melted.
  6. Enjoy!!
