How to Make this easy baked tortellini

Start by cooking up your spicy Italian sausage in a large skillet over medium high heat, until fully cooked through. Next, add your diced onions, bell peppers, minced garlic, mushrooms, and seasonings. Sauté for 4-6 minutes until soft.

Add marinara and fire roasted diced tomatoes and simmer on low for a few additional minutes. Season to taste with salt and pepper.

Grease a large baking dish, add your tortellini straight from the refrigerator and toss in the sausage marinara mixture until everything is nice and coated.

Top with mozzarella and parmesan, cover with foil and bake! I like to remove the foil and broil for a few minutes at the end to get the cheese golden and bubbly.

Ingredients

  • 1 lb spicy italian sausage, bulk (if links, remove casing)
  • 1/2 yellow onion, diced (about 1 1/2 cups)
  • 2 tsp minced garlic
  • 2 bell peppers, diced (I used green and orange, but any combo is delicious)
  • 8 oz mushrooms, stems removed and sliced
  • 1 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 14 oz can fire roasted diced tomatoes
  • 124 oz jar of your favorite marinara
  • 20 oz tortellini (refrigerated)
  • 2 cups shredded mozzarella
  • 1/2 cup grated parmesan
  • Salt + Pepper, to taste
  • Chopped parsley, for serving, optional

Instructions

  1. Pre-heat oven to 375 degrees and grease a large casserole dish; set aside.
  2. Add 1-2 T olive oil to a large nonstick or cast iron skillet over medium high heat.  Add sausage and cook, breaking up with the back of your spoon until fully cooked through. Drain excess grease if there is any.
  3. Add onion, garlic, bell pepper, mushrooms, garlic powder, Italian seasoning, salt and pepper to the skillet; sauté another 4-6 minutes or until veggies are soft.
  4. Add fire roasted tomatoes and marinara and simmer over low heat another few minutes.
  5. To greased casserole dish, add refrigerated tortellini (uncooked) to the base of the dish.  Top with Italian sausage mixture and toss to combine everything together and try to cover tortellini completely with sauce. 
  6. Top with shredded mozzarella and parmesan.  Cover with foil and bake for 30-35 minutes, until bubbling.  Uncover and bake an additional 5-7 minutes, option to broil for the last few minutes to get cheese nice and golden.
  7. Garnish with chopped parley and enjoy!!

Notes:

*If you or your kids don’t like spicy, you can sub mild or sweet Italian sausage.  You could also use ground beef or ground turkey for an alternative protein.  Keep in mind turkey tends to be more bland so you will need to season accordingly.
