10 MINUTE TERIYAKI SALMON BITES (air fryer) these 10 MINUTE TERIYAKI SALMON BITES (air fryer) these are so so delicious and easy and perfect for busy nights. Here’s what you’ll need! 

1 lb salmon, skin off (I usually ask the fish monger to do this for me)
Salt, pepper, 1 tsp garlic powder
1/4 cup soy sauce or Tamari (you can also sub coconut aminos)
3 cloves garlic, minced (~1 Tablespoon)
3 Tablespoons honey (you can also sub brown sugar)
1 Tablespoon hoisin sauce
1 tsp sesame oil
1 tsp sriracha
1 tsp rice vinegar
To serve: Rice, edamame, avocado, green onions, white sesame seeds, optional

Remove skin from salmon and slice into 1 inch chunks.  It’s easiest if you ask the fish monger to do this for you but this can also be done at home.
Pat salmon dry and season with salt, pepper, and garlic powder; set aside.
Combine sauce soy sauce, garlic, honey, hoisin, sesame oil, sriracha, and rice vinegar; pour over salmon. Let marinate for 10-20 minutes if you can (this can marinate all day if you are doing prep) If not, you can make it right away.
Preheat air fryer to 400 degrees. Add parchment liner to preheated fryer followed by salmon making sure not to overcrowd. Spoon some of the marinade over the tops of the salmon. Cook salmon for 6-8 minutes. 
Serve over rice/cauliflower rice with steamed edamame, avocado, green onion, and sesame seeds. Enjoy!!

Sheet Pan Pesto Parmesan Chicken!!! Our newest obs Sheet Pan Pesto Parmesan Chicken!!! Our newest obsession- it’s truly so easy and so delicious and completely fool proof! Toss seasoned chicken thighs with basil pesto (homemade or store-bought) and add to your sheet pan. Top each chicken with a simple mixture of Panko breadcrumbs, Parmesan, salt, pepper, garlic powder, and olive oil. Next, arrange your green beans all around the chicken and drizzle with olive oil, salt, and pepper. Then bake at 425 for 20-25 minutes.  I love to garnish with lemon and dill at the end 🤌🏼 I hope you absolutely love it.

Another set it and forget it type of recipe— the Another set it and forget it type of recipe— these crockpot chicken enchiladas are beyond easy and SO delicious. Only 6 main ingredients plus whatever toppings you prefer- It’s the  perfect weeknight recipe and leftovers are just as good! 

Here’s what you’ll need! Enjoy!!

1.5 lbs boneless skinless chicken breasts, about 2 large chicken breasts 
24 oz red enchilada sauce (about 3 cups)
2 T taco seasoning (I love Siete Foods taco seasoning but any will work!)
1– 15 oz can black beans, drained and rinsed 
1 3/4  cups shredded Mexican cheese blend
6 corn tortillas, cut into 2–3 inch pieces 
Salt and pepper
toppings of choice– green onion, cilantro, lime, jalapeño, greek yogurt/sour cream, guacamole, etc. 

Add chicken to slow cooker and season well with salt and pepper.  Add taco seasoning and enchilada sauce making sure the sauce covers the chicken completely.  Cover and cook on low for 4-6 hours or high for 2-4 hours.
When chicken is cooked, shred using two forks or by transferring to your stand mixer with paddle attachment (my personal favorite way to shred chicken). Add shredded chicken back to slow cooker.
Stir in black beans, tortillas, and 1 cup cheese. Sprinkle remaining cheese over the top, cover and cook on low another 30 minutes, or until cheese is melted and tortillas have softened. 
Serve warm in bowls with toppings of choice.
