Salsa Verde

SAUSAGE AND TWO POTATO SKILLET 1-2 T avocado or o SAUSAGE AND TWO POTATO SKILLET 
1-2 T avocado or olive oil 
1 lb spicy Italian sausage 
1/2 yellow onion, diced 
2 tsp minced garlic or heaping tablespoon of garlic paste (what I call lazy garlic) 
1 russet potato, peeled and diced into 1-2 inch pieces 
1 sweet potato, peeled and diced into 1-2 inch pieces 
1 T tomato paste 
2 cups veggie or chicken broth 
5-6 handfuls chopped kale 
1/2 cup heavy cream
Parmesan cheese, to taste (about 1/4 cup) 
Salt + pepper 

Heat oil in a large skillet over medium heat. Add sausage and cook breaking up with the back of your spoon until almost fully cooked. 
Add onion and sauté with the sausage until sausage is fully cooked and onion soft. 
Add in diced potatoes, garlic, tomato paste, salt and pepper. Cook for 2 minutes. 
Add in broth, bring to a boil, cover and reduce heat to a simmer for 15-20 minutes until potatoes are soft. 
Stir in kale, heavy cream, and Parmesan. Allow kale to cook for another few minutes and serve with more Parmesan. Enjoy!

5 INGREDIENT PIZZA BAGELS - KID FRIENDLY (Adjust t 5 INGREDIENT PIZZA BAGELS - KID FRIENDLY
(Adjust this depending on how many you want to make) 
5 mini bagels, sliced in half 
1/2 cup pizza sauce (more or less depending on preference)
1 cup shredded mozzarella 
Pepperoni 
Italian seasoning and sliced basil optional! 

Preheat air fryer to 380 or oven to 400 and add bagels to sheet pan. Spread sauce to the edges of the bagel, top with cheese then pepperoni. Air fry for 7-9 minutes or bake in the oven for 8-10 until cheese is melted and golden. Option to sprinkle on some Italian seasoning and sliced basil. 

Enjoy!!!

KID FRIENDLY EASY & FUN EASTER BREAKFAST IDEA!! 
🍳🐰Easter bunny egg in a hole! 

Using a bunny cookie cutter, cut a bunny out of the center of a slice of bread. Add to a hot skillet with melted butter and cook until golden and slightly toasted. Flip bread and crack an egg into the hole. Season with salt and pepper and cook on medium low for a few minutes until egg is starting to firm. Flip once more and cook for a minute or two more depending on how you and your kids like your eggs. Add in the cut out bunny pieces to toast up before serving. 

Add chives for the whiskers and serve with the toasted bunny cut out and fresh fruit! Enjoy!!

SMOKED SALMON & MINI BAGEL BOARD - perfect for Eas SMOKED SALMON & MINI BAGEL BOARD - perfect for Easter brunch or any gathering with friends/family. It takes less than 15 minutes to whip up and can be made ahead of time! Hope you LOVE IT!! 

Here’s what you’ll need!! 
•8 oz chive cream cheese, room temp (or your favorite)
•~5 oz smoked salmon
•1/4 cup chopped cucumbers 
•2-3 Tablespoons thinly sliced red onion 
•1 Tablespoon capers 
•freshly chopped dill 
•freshly chopped chives 
•Everything but the bagel seasoning 
•lemon zest + slices for serving 
•toasted bagels or crostini’s for serving 

Instructions:
Using a small knife or spoon, spread the softened cream cheese (I take out of the fridge 15ish minutes before making) in a single line creating little peaks then continue down the board. 
Next, arrange salmon pieces on top, followed by cucumbers, red onion, capers, dill, chives, everything but the bagel seasoning, and lemon zest. 
Serve right away or chill before serving.
Serve with toasted bagels or crostinis. Enjoy!!!

AVOCADO BUFFALO CHOPPED EGG SALAD (serves 2- lefto AVOCADO BUFFALO CHOPPED EGG SALAD (serves 2- leftovers are great!) 
1 avocado 
4 hard boiled eggs 
1/2 small shallot 
3 T buffalo sauce
2 T cottage cheese 
1.5 T mayo 
1/2 celery stick for a little crunch, optional (about 1/4 cup chopped) 
Chives or green onion 
Salt & pepper 

Add it all to your cutting board and chop away!! Today I’m using my @dexasintl Nib Cutting & Serving Board. A kitchen essential if you ask me!! High quality, doubles as a cutting and serving board, it has a drip well to catch juices and is dishwasher safe! I absolutely LOVE IT. 

Serve in lettuce cups, In bell peppers, on toast, with crackers, you name it! Enjoy!!
If you love a one pan 5 ingredient meal as much as If you love a one pan 5 ingredient meal as much as I do- try this 5 Ingredient Salsa Verde Chicken with Pineapple & Jalapeño! It’s SO SO yummy! And beyond easy. Would also be yummy with salmon or shrimp! Details below and full blog post linked in bio. Enjoy!!! 

1.5–2 lbs boneless, skinless chicken thighs
1 T taco seasoning
1 cup salsa verde, more as desired
3/4 c diced pineapple
Jalapeno slices
Salt + Pepper

Optional—- 
Fresh Cilantro
Lime
Radishes
Rice, for serving
Black Beans, for serving

Pat dry chicken thighs and then season really well with salt, pepper, and taco seasoning.
Heat a few T avocado or olive oil in a non-stick or cast iron skillet over medium high heat. When oil is hot, add chicken smooth side down and cook for 6 minutes.  Flip, cook another 5-6 minutes.
Reduce heat to low, pour in salsa and using a spoon cover the tops of all chicken with the salsa.  Simmer for 10-15 minutes, until chicken is fully cooked and tender.
Top with fresh pineapple and jalapeños and serve!  Option to add lime juice, cilantro, and radishes.
You could serve over rice and beans, with tortillas, with cauliflower rice, etc.
