Orange Almond Kale & Quinoa Salad

Mandarin Avocado Kale & Quinoa Salad

Who needs more greens in their life?? I know I do. This Orange Almond Kale & Quinoa Salad is a new favorite of mine and it was super easy! Thinly sliced kale, quinoa, avocado, mandarin oranges, sliced almonds, and green onions are all tossed up in a Sesame Miso dressing thats 100% drinkable might I add.

Simply add all salad ingredients to a bowl and toss it up! I decided to serve with pan-seared Salmon, but you could always add shredded rotisserie chicken and it would make for a perfect lunch meal prep! Since this salad is made with Kale, it stays good in the fridge for a couple of days and won’t be soggy. BONUS.
