Ingredients You’ll Need

  • Kielbasa sausage. You could also use chicken sausage.
  • Garlic.
  • Pasta of choice. (I used casarecci)
  • Chicken broth or water. I find that broth yields more flavor so if you have some on hand use that but if not no worries both work just as well) 
  • Rainbow chard. (you can also sub kale or spinach)
  • Grated parmesan cheese.
  • Salt and pepper.
  • OPTIONAL- lemon and red pepper flakes.

Ingredients

  • 14 oz kielbasa sausage, sliced into rounds 
  • 5 cloves garlic, minced 
  • 1 lb pasta (I used casarecci)
  • 4 cups chicken broth or water (broth yields more flavor but both work just as well) 
  • 1 bunch rainbow chard, removed from stem and chopped (you can also sub kale or spinach)
  • 2/3 cup grated parmesan, plus more for serving 
  • Salt and pepper 
  • OPTIONAL- lemon and red pepper flakes

Instructions

  1. Heat a large skillet over medium high heat.  When skillet is hot, add a few tablespoons olive oil and kielbasa sausage.  Cook for a few minutes per side, until golden.  Add minced garlic and cook another 30-45 seconds until garlic is fragrant.  (reduce heat if needed so garlic doesn’t burn
  2. Add uncooked pasta, water/broth, and salt and pepper.  Bring to a boil, cover, reduce heat to a simmer, and cook for 20-25 minutes, stirring frequently, until pasta is cooked and liquid has reduced.
  3. When pasta is cooked and creamy, stir in chopped rainbow chard and cook over low heat for an additional 2 minutes.  Stir in parmesan. 
  4. Serve with lemon and red pepper flakes if desired. Enjoy!
