One Pan Ground Turkey Sweet Potato Skillet– the perfect busy weeknight meal.  Made in ONE SKILLET, ready in under 30 minutes, and so healthy & delicious.

Ingredients

Instructions

  1. Heat a large skillet over medium high heat.  Add a few tablespoons of olive oil or avocado oil and add ground turkey.  Cook, breaking up with the back of your spoon, until no longer pink and cooked through.
  2. Season with salt + pepper and add onion, sweet potato, bell pepper, jalapeño, and garlic. Saute for 2-3 minutes, then add taco seasoning and toss to combine.
  3. Pour in broth, bring to a boil, then reduce heat and simmer for 7-10 minutes or until sweet potatoes are tender.
  4. Stir in kale and cook for another minute or two until slightly wilted. Season entire skillet to taste with sat + pepper. 
  5. Serve in bowls with garnishes of choice! I like to add chopped cilantro, jalapeños, sour cream, avocado, tomatoes, and lime.
  6. Enjoy!!!!
