Ingredients
1 lb ground turkey (ground beef or ground chicken would work as well)
1/2 yellow onion, diced (about 1 1/2 cups)
1 medium sweet potato, peeled and diced (about 3 cups)
1 red bell pepper, diced
1 jalapeno, diced
2 tsp minced garlic
1 packet taco seasoning (I used the Siete brand Spicy)
1 cup chicken broth or water
3 handfuls chopped kale (you can also use spinach)
Heat a large skillet over medium high heat. Add a few tablespoons of olive oil or avocado oil and add ground turkey. Cook, breaking up with the back of your spoon, until no longer pink and cooked through.
Season with salt + pepper and add onion, sweet potato, bell pepper, jalapeño, and garlic. Saute for 2-3 minutes, then add taco seasoning and toss to combine.
Pour in broth, bring to a boil, then reduce heat and simmer for 7-10 minutes or until sweet potatoes are tender.
Stir in kale and cook for another minute or two until slightly wilted. Season entire skillet to taste with sat + pepper.
Serve in bowls with garnishes of choice! I like to add chopped cilantro, jalapeños, sour cream, avocado, tomatoes, and lime.
