Today is National Cookie Day, which is an immediate calling for no-bake fudge cookies. Quite possibly my favorite cookie of all time.
I’m not going to lie and tell you these are healthy, boost energy, etc. (lol), but that doesn’t mean they aren’t freaking delicious. I’m all about “in moderation” and 1 million percent thing it’s okay and actually great to treat yourself from time to time.
I have been making these cookies since I was about 7 years old-no joke! I hate to admit it, but I could, in fact make myself sick eating these. That’s how much I love them.
This recipe is very simple and quick! One key thing to remember is that as soon as your chocolate mixture starts to boil, remove it from the heat about 45 seconds after to avoid it from over cooking! Other than that, these are easy peasy. enjoy!!

No-Bake Fudge Cookies

- Prep Time: 10 mins
- Cook Time: 5 mins
- Total Time: 15 mins
Ingredients
- 2 c sugar
- 1/2 butter
- 1/2 c milk
- 1/4 c cocoa
- 1 tsp vanilla extract
- 3–4 c oats
- 1/2 c creamy peanut butter
- wax paper
Instructions
- In medium sized saucepan, melt your butter on med-low temp. You want to be careful not to burn the butter.
- Once butter is melted, add sugar, milk, and cocoa. Stir until creamy consistency.
- Bring to a boil, allow to boil for 30-45 seconds and then remove from heat.
- Add in vanilla, peanut butter, oats, and stir. Continue adding oats until they are coated with the cocoa mixture.
- Drop by teaspoonfuls onto wax paper. Let cool(or don’t) and dig in!
