Little Gem Salad with Radish and Lemon Vinaigrette

This Little Gem Salad with Radish and Lemon Vinaigrette is such a light, refreshing, and easy salad to throw together and absolutely perfect for Spring. Serve at your next dinner party and your guests will love it!

I had a salad very similar to this at Casanova restaurant in Carmel when we were there last summer and knew it was something I wanted to re-create for the blog. I just love the simplicity of it.

Little Gem Salad with Radish and Lemon Vinaigrette

Here’s what you need to make this Little Gem Salad with Radish and Lemon Vinaigrette!

For the salad:

  • 1- 5 oz package Little Gem Lettuce Leaves
  • 4-5 radishes, sliced thin
  • 2 T chopped chives, more if desired

For the Lemon Vinaigrette:

  • 1/4 cup olive oil
  • juice of 3 small lemons, more or less to taste (~1/4 cup)
  • 1 clove garlic, finely chopped
  • 1 tsp dijon mustard
  • Salt + pepper, to taste

It takes less than 5 minutes to arrange the little gem lettuce, radish and chives onto a serving platter, then another 5 to whisk up the dressing and voila~

Little Gem Salad with Radish and Lemon Vinaigrette

Ingredients

For the salad:

  • 15 oz package Little Gem Lettuce Leaves
  • 45 radishes, sliced thin
  • 2 T chopped chives, more if desired

For the Lemon Vinaigrette:

  • 1/4 cup olive oil
  • juice of 3 small lemons, more or less to taste (~1/4 cup)
  • 1 clove garlic, finely chopped
  • 1 tsp dijon mustard
  • Salt + pepper, to taste

Instructions

  1. Arrange little gem leaves on a serving platter and top with radish, chives, and cracked pepper.
  2. In a separate bowl, whisk up olive oil, lemon juice, garlic, dijon, salt and pepper.
  3. Just before serving, pour dressing over the top.  Enjoy!!

    I made this salad for friends last night and everyone raved about how fresh and delicious it was. So easy and so good. Will be making again.
