Fluffy Greek Yogurt Pancakes

Ingredients

  • 2 c whole wheat flour
  • 1 c almond milk (can sub regular milk)
  • 1 egg
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 c greek yogurt
  • 1 T sugar
  • 1/2 tsp vanilla
  • Maple Syrup, for serving

Instructions

  1. Preheat griddle
  2. In a large mixing bowl, combine egg, vanilla, milk, and yogurt. Gradually add in the dry ingredients and mix until smooth consistency is formed.
  3. Scoop 1/4 c of the batter onto griddle and cook for 1-2 minutes, or until bubbles start to form and bottom is golden. Flip and cook an additional 30 seconds.
