Ingredients you’ll need
- Boneless, skinless chicken thighs.
- Basil pesto. Store-bought or homemade.
- Garlic powder.
- Salt & Pepper.
- Olive oil.
- Grated parmesan.
- Panko breadcrumbs.
- Haricot verts.
- Lemon.
- Fresh dill.
How to make this easy Baked Pesto Chicken
- Trim any excess fat off of your chicken thighs. I do this using kitchen shears and it only takes a few minutes, just quickly cut it off and discard. Add chicken to a mixing bowl and generously season both sides with salt + pepper.
- Then, add basil pesto to the bowl with chicken and toss to coat! Feel free to add a few extra dollops to get them nice and covered. Add pesto covered chicken to your silicone baking sheet lined pan.
- In a separate bowl, toss together grated parmesan, panko breadcrumbs, olive oil, a dash of salt, black pepper, and garlic powder. Spoon mixture on top of chicken thighs and gently press into chicken.
- Lastly, arrange haricot verts around the chicken all over the sheet pan. Drizzle with extra virgin olive oil, s + p.
- Bake everything in a 425 degree oven for 20-25 minutes until chicken is fully cooked through and green beans cooked to your liking!

Easy Sheet Pan Pesto Parmesan Chicken

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, excess fat trimmed
- 1/4 cup + 2 Tablespoons prepared basil pesto, store-bought or homemade– see below if you want to make your own!
- 1 tsp garlic powder
- Salt and Pepper
- 2 T olive oil
- 1/2 cup grated parmesan
- 1/2 cup panko breadcrumbs
- 12 oz haricot verts
- Lemon and Fresh dill, as garnish, optional
Basil Pesto (If you want to make your own):
- 3/4 cup olive oil
- 2 cups tightly packed basil leaves
- 5 cloves garlic
- 3/4 cup grated parmesan
- 1/2 cup pine nuts
- Juice of 2 lemons
- s + p, to taste
- Blend everything up until smooth! Store in the fridge for up to a week!
Instructions
- Preheat oven to 425 degrees and line your sheet pan with a silicone baking mat or parchment paper; set aside.
- Using kitchen shears, trim the excess fat off of the chicken thighs then add to a mixing bowl.
- Season both sides of the chicken generously with salt and pepper. Add in the prepared pesto and toss to coat the chicken. Add 1-2 more Tablespoons if needed.
- Arrange the pesto chicken onto your sheet pan.
- In a separate bowl, combine panko breadcrumbs, 2 T olive oil, grated Parmesan, garlic powder, 1/4 tsp salt, and 1/4 tsp pepper. Toss to combine then spoon this mixture on top of all chicken thighs, using your hands to press into the chicken.
- Add your haricot verts to the sheetpan surrounding the chicken, drizzle with olive oil and season with salt and pepper.
- Bake for 20-25 minutes, until haricot verts are cooked to your liking and chicken is fully cooked through.
- Finish with freshly squeezed lemon and fresh dill.
