1 lb spicy Italian sausage
1 large shallot or 2 small, finely chopped (about 1 cup)
2 tsp minced garlic
2 cups dried orzo
4 cups chicken broth, an additional 1/2 cup as needed
Zest + juice of 1/2 lemon
2 cups frozen peas
1/2 cup grated parmesan, plus more for serving
salt + pepper to taste
Instructions
Heat a skillet over medium high heat. Add a few Tablespoons of olive or avocado oil and then add shallots and sausage. Break up with the back of your spoon until sausage is fully cooked and shallots soft and fragrant.
Add minced garlic and orzo and toss around for about a minute until garlic is fragrant and orzo golden.
Pour in broth and season with salt + pepper. Bring to a boil, then reduce heat to a simmer, cover and cook for 12-15 minutes, stirring every few minutes until the orzo is cooked and dish is creamy. You may need to add another 1/2 cup of broth here.
Stir in frozen peas and cook over low heat for a few minutes.
Stir in lemon zest and juice, and parmesan.
Serve in bowls with additional parmesan and red pepper flakes (optional). Enjoy!!
