Cookie Butter Gooey Butter Cake

Here’s the deal: there is a very strong chance you will make yourself sick eating these gooey squares of cookie butter goodness.

The three words I would use to describe them would be heavenly, mouthwatering, and melt-in-your-mouth.  You will instantly fall in love.  It’s the perfect finger food and dessert to bring to your next get together because they are quick to prepare, don’t need to be served right away, and are out of this world delish.

Last thing, try not to think too much about what’s in them while you’re indulging in the greatness.  You don’t have to be good all the time, and everyone deserves a treat every now and then.

Cookie Butter Gooey Butter Cake

Ingredients

For the bottom layer:

  • 1 box yellow cake mix
  • 1 egg
  • 1/2 c butter, melted

For the top layer (filling):

  • 5.5 c powdered sugar
  • 2 eggs
  • 1/2 c butter, melted
  • 1/3 c cookie butter
  • 8 oz cream cheese
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees and grease a 9in x 13in baking dish, set aside.
  2. Combine yellow cake mix, 1 egg, and 1/2 c butter in mixing bowl. Mix until well combined and pour into prepared baking dish, evenly distributing into dish.
  3. Next, combine melted butter, eggs, powdered sugar, cream cheese, and vanilla in a clean mixing bowl; mix well.
  4. Pour mixture directly on top of first layer of cake and smooth out.
  5. In a small bowl,  heat up the cookie butter for about 30 seconds in the microwave, until melted.  Pour on top and using a knife gently swirl into the top layer. 
  6. Bake for 40 minutes, until golden.  Center should still be gooey.
  7. Let cool 5-10 minutes before serving.
