Coffee Oreo Chocolate Chip Cookie Ice Cream Sandwiches

I woke up seriously craving an ice cream sandwich on Monday morning, so naturally, I did whatever it took to get one.   It just so happened that today is National Coffee Ice Cream day, so of course the only option is to share the ice cream sandwich love. Might I add, Coffee Oreo Chocolate Chip Cookie Ice Cream Sandwich Kinda Love.

That’s the definition of love at first sight if you ask me.

Me and a few gals started a Gals ONLY fantasy football team 7 years ago, and not only is the league still going strong, we take it very seriously.  The name of the league is Dude DayZ because we get together and watch football, eat delicious treats, and do what dudes do.  And the best part is No dudes are allowed!

This past Sunday was our draft day, so we all posted up with our computers, put our game faces on, and ordered all the things: wings, chips & queso, pizza, fried mozzerella sticks, french fries, cold brews, more cold brews, etc. etc.

With all that being said– I was extremely tired and a little (okay, a lot) hungover on Monday, and I needed that ice cream sandwich, and I needed it fast.   I even tried convincing my sous chef (Alessandro) to make me one, but quickly realized i’m too much of a backseat driver and was in the kitchen in no time.

Luckily, I had a carton of Trader Joe’s Coffee Chip Ice Cream and Pinch of Yum’s chocolate chip cookie dough in my freezer so that was half the battle right there.  Lindsay from Pinch of Yum is one of my all time favorite food bloggers, partially because we have the same name and she’s also an AY gal, but mainly because all of her recipes are super approachable and insanely delicious.  AND her chocolate chip cookies are seriously the best i’ve ever had.  Pair them with coffee ice cream and oreo crumbles and you’ve just landed in heaven.

It’s pretty much impossible to mess up an ice cream sandwich, so feel free to use whatever cookie/ice cream combination you have on hand! And although a freshly baked warm chocolate chip cookie is the smartest decision, you can definitely use store bought cookies as well. You can store the prepared ice cream sandwiches in the freezer for up to a week, although I will be shocked if they last that long!
