I’m all about simple and fresh recipes. This Tomato and Mozzarella Arugula Salad with Lemon Garlic Vinaigrette is simple, fresh, and summery. I served it with a lemon garlic parmesan vinaigrette that I could seriously eat by the spoonful it’s so delicious. I made more than enough of this salad the other night to capture some good photos for you guys and Alessandro literally ate ALL of it– imagine that! I literally live with a human garbage disposal.
Anywho, this would be the perfect addition to your next cookout or easy weeknight meal. Simply make your dressing and then toss it all up– truly doesn’t get much easier. You could also always make extra dressing and eat throughout the week because trust me- it’s SO.GOOD.Print
Tomato and Mozzarella Arugula Salad with a zesty and delicious Lemon garlic vinaigrette. So refreshing you won’t want it to end!
For the dressing:
- 3/4 c olive oil
- Juice of 2 large lemons
- 5 cloves garlic, roughly chopped
- Salt, to taste
- 1 tsp red pepper flakes
- 1/2 c grated parmesan cheese
For the Salad:
- 6–8 c fresh Arugula
- 10 oz cherry tomatoes, sliced in half lengthwise
- 8 oz fresh mozzarella balls
